BUT WHO IS VICTOIRE ?

A TRIBUTE TO THE CHARACTERS (REAL AND FICTIONAL) OF THE THE PLATEAU MONT-ROYAL

 

Victoire is a character imagined by Michel Tremblay, a Quebec novelist well known for his Chroniques du Plateau Mont-Royal. Victoire is a typical Plateau Mont-Royal woman who lived on Fabre Avenue with her entire family, including her son Édouard, a few steps from our restaurant. In Tremblay’s books, Victoire’s family home becomes a neighborhood hangout, where friends, family, and neighbors gather. This is the welcoming and lively atmosphere we were aiming to capture when we opened the restaurant.

ALEXANDRE GOSSELIN

Alexandre Gosselin is passionate and innovative chef.  In fact, as a teenager Alexandre already knew he wanted to become a chef. One of the founding team members, Alex prefers to work with local seasonal ingredients. He will always surprise you with his menus of constantly evolving flavors.

He graduated from Montreal’s Institut du Tourisme et de l’Hôtellerie du Québec before working in France along side Paul Bocuse, Alain Chapel, and the Pourcel brothers. Upon his return, he was a sous-chef at Europea and Lemeac, after which he became head chef at Ô Chalet, Le Simpléchic, Le Locale, and Le Bar et Boeuf.

Alex is the recipient of both the Jury Prize at the Creation de Chef Sauternes-Barsac (2010) and the Gold Metal Plate (2011). He makes regular appearances on L’Épicerie, and À couteaux tirés, and offers cooking workshops at Les Touilleurs.

SINDIE GOINEAU

SOMMELIÈRE

 

Sindie Goineau has been working in Montreal’s restaurant scene for over 15 years. She assisted in the opening of five restaurants and developed the wine lists, as a consultant, of six restaurants located in Quebec, including, of course, Chez Victoire. Sindie obtained her diploma as a professional sommelier from the ITHQ. She is passionate about her work and constantly improves her knowledge of wine, namely by traveling regularly to meet winemakers and discover new wines from around the world. Sindie places a lot of importance on working with products made by nature-conscious producers. In 2017, she was inducted into the famous Ordre des Côteaux de Champagne, as Dame Chevalier. She proudly collaborates on the blog Le Cercle du Vin.

In her spare time, Sindie likes the “bottle game. She voluntarily accepts to participate in an outdoor tasting or to chat with sommelier and blogger girlfriends … In Victoire’s dining room, Sindie always ensures that the wines she proposes, in addition to their pairing with the dishes, please your palate as well as your budget. Sindie is also an expert in organizing events, big and small. She is the contact person should you wish to organize a birthday, a cocktail party, a wedding reception (or a shower) or a launch, all in our private room with 50 seats or even in the dining room.

EDWARD ZAKI

RESTAURATEUR

 

Edward began his entrepreneurial career in the Montreal area in 1989, investing in food markets, retirement homes and convenience stores. A few years later, he decided to move to Egypt, where he opened four restaurants and a caterer. His stay overseas was short-lived because five years later he returned to Quebec for good and opened a business in Hudson.

Wishing to reconnect with his passion for great food and get back into action in Montreal, he opened his first restaurant on Saint-Denis Street in the Latin Quarter, Confusion Tapas. He then hired a young woman full of assurance and ambition, Sindie Goineau and two young men full of talent and character, chef Alexandre Gosselin and Karl Leblanc. In 2010, Edward, Sindie and Alexandre opened Chez Victoire – a neighborhood bistro. Edward’s entrepreneurial spirit always lead him to new exciting projects. He has participated as a partner in several restaurants, including Vertige and Thazard.

KARL LEBLANC

MAITRE D’HÔTEL

 

Karl is a veteran of the restaurant industry, having taken his first steps working in a restaurant at 15 years of age. Since then, his passion for gastronomy and wines is rivaled only by rock & roll music. He had the opportunity to indulge in both his passions during 4 years while living in Notting Hill, where he rubbed shoulders with rockstars and foodies alike.

Starting off as a loyal collaborator of Edward, Sindie and Alex, during more than a decade, he is the newest co-owner of Chez Victoire. Just like Victoire herself, Karl welcomes guests as if they were old friends, with the charm, humour and hospitality that we all know him. Karl is also responsible for the great team that welcomes you to the restaurant every night and makes you feel like home.
